Sweet Potato Hash
Ah, the sweet potato. A beautiful vegetable full of Vitamins A, C, B and Manganese (to name a few). This amazing potato is a staple in our house. And this easy, delicious hash is a favorite. It also comes together in just a few minutes.
First, grate your potatoes (I usually grate 2-3) and dump in spices: 2 tsp paprika, 1 tbsp dried onion, 1 tsp garlic powder, salt and pepper to taste.
Stir and place in skillet with some heated avocado oil. Sautè until potato is cooked all the way through. I personally like it with some brown and crispy bits on it.
Finally, scoop it onto a plate, add bacon, egg, green onion (and anything else your heart desires).
Now, bite into that nourishing, warm, delicious meal. Enjoy!
